Banana Bread

 My kids LOVE banana bread and this recipe was passed to us by my mom. The kids love it so much they have even learned to make it on their own.  Whenever we have old mushy brown bananas that haven't been eaten we know we can turn them into a delicious batch of banana bread.  




INGREDIENTS:
1 stick of melted butter
1/2 cup brown sugar
1/2 cup white sugar
2 eggs
2 tsp. vanilla
1 tsp. baking soda
1 1/2 cups flour
2-3 ripe bananas
1 small container vanilla yogurt


I am all about the easiest possible way to get things finished...so I dump everything into my bowl at one time.  Mix all the ingredients together THOROUGHLY, you don't want to have any large chunks of bananas left.


We use this excellent 4 mini loaf pan.  These little loaves of banana bread are perfect to give away to friends, family or neighbors or just keep them all for yourself because they are too cute.
Divide the batter into the 4 loaf areas of the pan evenly.


We always like a little bit of added sweetness so we use a cinnamon sugar mixture that looks like this to top each loaf.


Sprinkle each loaf generously with this cinnamon sugar mixture.


Bake at 350 degrees for 30-40 minutes (40 minutes usually works best for us) or until edges are browned and middle in done.


Yummy.  Serve warm or refrigerate and enjoy later!
